We don't rush. Our sourdough ferments for 48 hours because that's what it needs. Our croissants are laminated by hand, folded seventeen times, because shortcuts show. You taste the difference when someone cares.

Industrial bakeries work in minutes. We work in days. The long fermentation doesn't just develop flavor—it breaks down gluten, making bread easier to digest. It's why people who struggle with commercial bread often have no trouble with ours.

We source grain from mills that still use stone grinding. The oils in the wheat stay intact. The bread tastes like something, not just texture and air.
